Pumpkin Pie Spice Cookies

Ingredients

• 1 box yellow cake mix
• 2 teaspoons pumpkin pie spice
• ¼ cup soft butter or margarine
• 1 cup vanilla frosting
• 1 cup canned pumpkin (but not pumpkin pie mix)

Instructions

• Preheat oven to 375
• Lightly grease a cookie sheet
• In a large bowl, blend the cake mix, pumpkin pie spice, butter and pumpkin with a mixer for one minute on low speed
• Drop spoonfuls of the batter on the cookie sheet, approximately 2 inches apart
• Bake for 10-13 minutes, or until the cookies are golden brown around the edges. Remove from the oven and set on a cooling rack. Let the cookies cool down (30 minutes) and frost with the vanilla frosting.
